When you arrive in front of Willy Carayon’s stall on Forville Market, you are approaching the final phase of shellfish farming: the direct sale of his products – Bouzigues oysters, flat or deep-sea oysters, mussels. Willy Carayon is passionate about raising oysters from spats to maturity. “I was born in an oysterbed !” he jokes. Following in the footsteps of his father and his grandfather, Mr. Carayon has farmed shellfish for 20 years now. From one season to the next, from hatching to maturing, he supervises every stage. At the head of seven 25-are parks located in the South-West corner of the Etang de Thau on the Mediterranean coast, he is careful to offer only the best quality products. As for the clams, vongoles, winkles, shrimps and other shellfish that are fished, Willy is strict about only buying regional produce. For Willy, selling his wares directly on the market represents an enhancement for his produce and his work. He considers the positive feedback from his clients as his best reward
