Jean-Pierre Astor is at the head of his family firm and is a brilliant defender of a genuine cheese heritage. Quality and freshness are his watchwords. He specialises in cheese with black truffles and offers a variety of textures from creamy to firm, delicately fragrant or tasty and full of character, acidic, strong, very strong or mild… because taste is something very personal. More than 140 varieties of cheese are available in summer and slightly fewer in winter; cheese is a seasonal product! Jean-Pierre meticulously selects his cheese from his suppliers at Rungis wholesale market or in the countryside around Aix-en-Provence. Closer to home, he works with an exceptional goatherd in Peymeinade who provides five types of goat’s cheese of outstanding quality. They are farmyard cheeses made with raw milk: mountain cheeses, local products. He has a maturing chamber to ensure the aromas and flavours of his cheeses develop to their best, thus satisfying the wishes and whims of his clientele, allowing them to enjoy an extraordinary taste experience.
