For more than 20 years, Jean-Michel has reigned masterfully over his charcuterie stall in the Forville Market. His aim is to pamper his clients and to supply only the best. He takes great care in choosing his products and his mouth-watering selection illustrates the richness and quality of the specialities he offers: a multitude of different hams; dried sausages from Ardèche and Corsica; a cascade of different pastas; Grandma’s pâté with potted duck, Provençal terrine with sweet peppers and olives; individual duck or rabbit pâtés and his famous “Charcutier’s hat” to woo and astonish lovers of good food. Certain salt meats even boast a medal from the Agricultural Fairs no less! Foie gras from the Gers region, Norwegian smoked salmon… a handful of ewe’s milk cheeses from the Pyrenees, a farmyard Reblochon cheese and a heated platter of choucroute and Caen-style tripe round off his display. Quality, variety, traceability, advice, friendliness, proximity… Jean-Michel busies himself alongside his wife Dany, who oversees sales of their products.
